If you are talking about a certain amount of people, such as 505, in a paper would you write “500+ people” or “500 plus people”??

First of all, you are talking about a certain NUMBER of people, not amount.
Preferably you would NOT use the plus symbol (+).
You would write out the number: five hundred. You would not use numerals.
You would say “There were more than five hundred….”
You might get away with saying, “There were five hundred plus people”, but this wouldn’t be as effective.
And if you know EXACTLY how many people there are, you should use the exact number and not use the word PLUS.
