All three of your responses are good, however, they would be more accurate if you said:
Shall I play the music on the radio?
Shall I put the music on the tape?
Shall I turn on the music?

You could say ‘Should I put on some music?” or “So you want to listen to some music?” If you still aren’t sure, you could just ask “What music do you want to hear?” or “What music do you want to listen to?” Any way you ask, I’m sure your friends will be able to understand you. With friends, ‘shall’ is a little polite and formal, but still acceptable. You could replace “shall” with “should”.

The most used verb would be play as in ‘play the music’ but Americans are very casual about language and any of your examples are used regularly along with many others.

You could do any of those, but you might want to try something like, do you want the music on, or do you want to listen to music, or something like that. If i had to chose out of those three i would say shall i turn on music.

Your 3 questions are fine. I personally I would say, “Do you want to listen to music?” or “Do you want me to play music?” or “Do you want me to turn on the music?” The great (and frustrating) part about English is there are so many different ways to give one though.

That’s correct. There no word to play for music that I’m aware of.
It’s just: “play music.”
