Such people are called “All-around Hand” on a ranch or farm, but what you will usually find is that they are referenced as “Can do whatever they turn their hand to”
“Jack of all trades” is only half an expression, the rest is “master of none”

Anyone know a one or two word to describe this person? I was originally thinking Renassaince man, but it doesn't seem to fit.

Are you looking to praise him or put him down?
I would use “Jack of all trades” if you are denigrating the fact that he is a generalist.
I would stick with the phrase “Renaissance Man” if you are praising his skills as a generalist.
Other terms people use are Polymath and Homo Universalis.
