She’s been to the proverbial fat farm and back, and she still gets a kick out of champagne every day.

i think its not “proverbial fat” per se…the word “proverbial” is actually used like a metaphor…also to describe something typical or a stereotype…
so if its ” I am the proverbial fat boy in a candy store” it means the person is saying “i am like a fat boy in a candy store”…
or “She’s been to the proverbial fat farm and back” it means “she’s metaphorically been to the fat farm and back” which basically means she hasnt actually bn there but has had a near-enough experience…

I think it means ‘ often talked about as if it is common knowledge’. The fat boy referred to is the boy in the oft used phrase ‘as happy as a fat kid in a candy store’.
