I would suggest talking to your advisor about the electives that will help you out the most. If you plan on transfering, talk to your advisor about what courses you will need to transfer somewhere. They’ll (try) to point you in the right direction, but its mostly up to you, not them to decide. Some advisors are more helpful than others. I would suggest taking classes that are interesting to you. You might end up changing your degree because of that, but you may be a happier person.

Well it depends on what you want to do with your degree. Honestly, associates degrees are pretty worthless. If you are thinking about going to a 4-year school later on take classes that will transfer and fulfill core requirements at the university you want to transfer to. If you are planning on finishing your schooling after your associates you might want to take a class in public speaking, writing, math, or communications.

It all depends on what you would want to do after you get your AA degree. As you might already know, the whole purpose of the AA degree is as a substitute to the first two years of the 4 year college. By itself, AA degree does not give you any marketable skills.
Think about what you are going to do after the AA degree. If you are going to engineering, you might as well take higher level math or science as they all require calc1 through calc 3 and differential equations, then advanced physics.
