Here’s the sentence: Spring water is so much better than well water.

What part of speech are each of these words being used as?

Wouldn’t “so” & “much” be adverbs of “better” with “better” being an adjective?

Adverbs modify adjectives and another adverb (and even a clause).

Therefore, “so” is an adverb modifying the adverb “much” which in turn modifies the adjective “better.”

No. Adverbs describe verbs, not adjectives.

Better is an adjective. So much is an idiom.
