why do some clocks write the roman numeral for four like IIII instead of IV?
On our clock we noticed that four o clock was written as IIII instead of IV. since IV is the usual way why would this be?

It has to do with the balance of weight on the clock. If they used IV, the balance would be off on that side. (Personally I don’t see how that works, but that’s what I have read over the years…)
