I am also an SJSU student, and am appalled at the abysmal job of SJSU in providing email accounts to students. This is supposed to be silicon valley, birthplace of the personal computer.
I did some research and finally found this page:

It’s over two years old, but points to this URL to request an email account:
http://www.sjsu.edu/computing/onestop/
