An improper fraction has a numerator that’s bigger than the denominator. You have to think conceptually about what 2 7/8 means. You have 2 of something, and then another 7/8 of one. Each unit is 8/8. The 2 units would be 16/8. Add the partial unit and you have 23/8 The easy way to do it when you understand what it means is to multiply the denominator by the whole number (8 * 2 = 16) and add the numerator (16 + 7 = 23).

When you’re solving almost anything with fractions, it’s just quicker to do math with improper fractions and then convert the improper fraction to a normal one at the end. So if you’re trying to split something between friends and each person will get more than one whole object, it’s easier.

Pretty much any time you’re doing calculations of any sort. The problem with mixed numbers is that there is a hidden addition problem there. For example, suppose you are buying 16 things at 2.25 apiece. That “2.25” really means “2 plus 1/4”. If you multiply it that way, you have to multiply 16 by 2, then 16 by a quarter, then add the results. Not too difficult, I’ll grant, but if you’re told that you’re buying 16 things at 9/4 apiece, then it becomes 16 times 9/4 = 4*9 = 36 and you’re done – no addition needed.
