But they are, or else why give them names? White is the presence of all colors at the same time, black is the absence of color, grey is the combination of the two pigments.

Because, in physics, the true colours are made of a single wavelength of light. White is all wavelengths together, so it’s all colours. Black is the absence of light, so it’s no colour. you can’t get grey light (only grey paint or whatever).
