As long as the portion you are quoting makes sense on its own, and the meaning is not changed as a result of following words being omitted, you can stop quoting wherever it makes sense.

Occasionally, you will see a quote with dots where a portion has been omitted:

‘This man ….. had nothing further to do. His mission was accomplished.’

The dots may indicate a descriptive portion of the sentence which is not needed for your purpose.

You can stop the quote whereever you want. Incorporate short direct prose quotations into the text of your paper and enclose them in double quotation marks.

You enclose the entire quotation in “quotes.” So you can “quote partial sections” and join them with “other quoted sections” so that you can “stop quoting the sentence” whereever YOU need to, according to the requirements of what you are writing. If you are quoting a long section or a short section, it doesn’t matter–the same rules apply.

Rules of citation vary, so use whatever format your professor or teacher tells you to use when citing the quotes. There are a large variety of styles of citation.
