What is the usual English way of responding to this short remark?
Note: Andy is me.

Excellent Andy, I confirm I will go to your boss’ office tomorrow at 8 AM then.

You might say something like, “we look forward to seeing you” rather than just “okay”

I can’t say that there is a “usual” response to such a remark. Your correspondent has told you that he/she will go to your boss’ office tomorrow morning. If that’s good with you, respond “OK”. If it’s not good with you, respond with a note saying why it’s not good.

“Thank you” would seem to be the response if this is something you want to have happen. If you don’t want it to happen you could say something like, “Could you please reconsider your decision to go to my boss?” And follow this with why the person should reconsider.
