If a person describes himself as hunky-dorey, then the person is content. So… I would think that a hunky-dorey day would be an acceptable one — one that was neither extraordinary nor bad.

I’ve never heard it used quite like that. It’s more often. Everything’s Hunky-Dory, meaning everything’s fine. In your example, it would mean, to quote a well-known phrase or saying, “Have a nice day” Hope this helps.
