Invincible is “cannot be overcome” so the phrase refers to someone who is not less (or short) of that.

It means someone or something is unconquerable.
“Invincible” means unconquerable, and to be “nothing short of” it means that the person or thing is right there already. They are ‘not short’ of the mark. (the mark being the finish… the idea of being ‘short of’ it means not being there yet…)
Well, that made a simple explanation sound hard! But it isn’t really. You are nothing short of curious to know what this phrase means! 🙂
