It means they are bright and feeling fine.

Why not applely or orangey?

Peaches have a sexula connotation, so they may mean they are also a bit frisky

I have to agree….it means, “I’m just fine” or sarcastically they are answering “I’m just peachy” and really meaning they are in a bad mood or not feeling well.

splendid, fine, good, dandy, nifty, not bad, swell, groovy, smashing, neat or great.

I have heard it as “peachy keen” mostly.

It means the person is fine, happy, or, if they are being sarcastic, it means they are upset. Hope this helps!!!
