Eat crow means stepping down from a stand you’ve taken. For example, you’ve claimed something as right, but when you’re proved wrong, you have to acknowledge that you were wrong. So you eat crow.

Well, where I come from, the person who said it to you wants you to eat your words. It’s usually said to a person after they have said something to someone which is offensive to them. Depending on which part of the South you come from, dictates how much s–t, excuse me crow, they want you to eat. Good Luck & Blessings
