Assuming you mean “belonging to the fathers-in-law”, it would be fathers-in-law’s

Father is the noun, so it pluralises. Then the whole compound noun takes ‘s to make the possessive.

Father is a particular noun, YOUR father (or someone else’s father, but a particular father). And so is father-in-law. Just because it’s hyphenated doens’t change it. A noun that consists of hypenated words, like father-in-law, should be considered it’s own word.
