I say “care-a-mell”. I’m southern, so I kinda drag it out.

However, the word ‘Carmel’ is pronounced different (& spelt different, obviously). Carmel is pronounced ‘Car-mel’

1st one is right, but I pronounce it in 2 syllables -cara-mel….but less emphasis on the -a.
