For example, You must keep a notebook an an assigment book. Should it be an an assigment notebook or an a assignment notebook?

I believe you mean to say: “You must keep your notes in an assignment book”
There is no need to have the word “an” twice. I think you mixed up “an” with “in”. Also, just to clarify, “a” turns into “an” when its before a word that begins with a vowel.
