In the US:

General Studies are the courses that make up the foundation core of many degree programs. Also known as “the core”, “general education”, or “foundation”

It includes any subject but at the lower level. The purpose is to make sure you know enough about that subject to apply the information to higher level courses.

As a major, General Studies is an interdisciplinary degree program that allows one to study in a variety of fields of interest to them instead of majoring in one specific field. This is good for people who are in college solely to ‘learn cool stuff’ and for those who want to study a combination of subjects that isn’t a regular degree program (such as a scientist combining writing so that he can become a science journalist).

The major is also often called ‘Liberal Arts’, ‘Liberal Studies’, ‘Interdisciplinary Studies’…
