What are the benefits and catches to ROTC?
I know that Fresh/Soph. year I’m not obligated to serve, but if I continue through Jr/Sr year how many years of service would I have to do? and Do I get a choice if I fly a plane or helicopter? (I am going to school to be a pilot)

The catch 22 is that you are bound by contract to serve out your enlistment until that contract is up…and there is no way out.
Unless things have changed, it would be 4 years active duty, 6 years guard/reserve.
They will provide you with scholarship money to cover the cost of tuition and some books.
You will not have the choice of what you want to fly outside of type of aricraft. If you decide that you want to fly planes, and you qualify, you will be assigned an aircraft that is in demand for pilots…so you could be flying Cargo planes out of Antartica if that’s where they need you.
The best thing to do in your case will be to GET EVERYTHING IN WRITING on your contract before you accept any money from the ROTC programs. If you want to fly a particular aircraft, have that specified in your contract, so that you have something to fall back on.
