What I would recommend is try to identify a few Med Schools you think you might be interested in, contact them, and ask them #1 what you NEED to take to get in, and #2 if they know of any offbeat, unique schools that are still acceptable to them.

(as a side note, almost every University will let you study overseas, so that’s not going to be a problem for you anywhere).

In California, UC, Santa Cruz has a good reputation for letting students be creative. Many small liberal arts colleges have reputations for letting students be creative (like Sarah Lawrence, or Bryn Mawr).

Lastly, nearly every University offers many degrees that allow for “Independent Studies” or “Directed Studies”. These programs will let you design your own classes.
