My only suggestions:

Make another paragraph break before the sentence that starts “In light of . . . ”

I do not really understand your last sentence but that is probably because I do not know what you said in your interview.

There is a grammatical error in the last sentence which you will want to correct – “in regards to the essay” should be “in regard to the essay.” Also, “follow-up” used as an infinitive should be “follow up.” The hyphen is not used under these circumstances.

“due to our meeting” is not very good usage. I would say, “I also wanted to follow up with you in regard to the essay questions to determine which one was covered by our meeting and will not, therefore, need to be answered.”

Use a period or a semi-colon after “Thanks again” rather than a comma.
