It is tough to guess. If the fire is really hot or your grill is close to the fire, 4 minutes a side is a good guess. If you let your fire get to the glowing stage instead of the flame stage, you are correct. You will need 6 or 7 minutes on a side.

With my concerns about chicken, I bought a meat thermometer. They are between $10 and $20. Better safe than sorry. And my chicken breasts and steaks are coming out great now. No more guessing.

To cook the chicken to a safe internal temperature of 165ºF, you would need to cook it approximately 30 minutes (turn it after about 15 minutes)…assuming your fire is not huge and extremely hot! The steaks could take considerably less time if they are only 1/4 inch thick, because steak, if seared on the outside, is probably safe from bacterial infections due to the fact that only the surface area has been exposed, and the surface area will all be seared over the flame. So? Time to cook the steaks…10-30 minutes (depending on how rare or well-done you want them).

Start your fire using dry, soft wood. Then add hard wood and get it burning well until it is burnt down to red coals, and THEN cook over it. Add hickory wood for smoked flavor. 🙂

Enjoy!

God Bless.

P.S. Don’t cause charring on your food…some “burnt” foods have been linked to development of cancer.

those times are actually pretty reasonable. The chicken will release itself from the grill when its done. As for the steak, it depends on how well you want it done.
