Which of these would give me more of an opportunity to teach in middle school or high school…?
A social science major with a concentration in economics, or social science with a concentration in psychology?
That is, of course, if I take all the proper teaching classes as well.

Personally, if the big difference is whether to concentrate in economics or psychology, go with psychology if you plan to become a teacher. The coursework for psychology will be very helpful to you as a teacher. I would recommend classes in psychology of personality, learning theory, cognitive psychology – anything that has to do with how the brain functions, behavior management, etc.
This would be better for high school, but you can still get a middle school job – really it depends on what you get certified in.

Both of these would be good for teaching high school, and possibly at some middle schools. You’re likelier to find a position teaching economics or psychology in a high school though as an elective. Depending on the size of the high school you may also be asked to teach an additional subject. Even though you might really want to teach economics or psychology a minor in another area like history might make it easier to get a job, because then the administration in a smaller school could have you teach the elective and a history class.
