Sampling error.

If you flip a coin once, and it comes up heads, would it be accurate to say that heads is always the result of a coin flip?

If you flip the coin ten times, you might get a 5/5 split, but you might get a 6/4 split, and again you could draw the wrong conclusion.

However, if you flip a coin 1,000 times, the answer is likely to be much closer to 50%.

The same is true for any type of polling or data set. The larger the set, the less weight that a single result will have on the conclusion.
