Food would necessarily have to be both easily preserved and light enough to transport. Salted meats, possibly beans would have been staples, but the explorers would have almost certainly hunted local wildlife to supplement their supplies.

Tools would be those you would take on a camping expedition today – a saw, axe or sharp knife would be an essential.

Not sure if I understand what you mean by how many people. That really depended on the specific exploration, i.e. Columbus vs. Lewis and Clark.
