Do you say ‘the persons’ or ‘the people’???

People would be the correct choice. Persons is a plural noun so you can’t say ‘the persons’ because ‘the’ denotes a singular. It would have to be ‘Those persons’. So you could, technically, say, “Those persons I liked the leased were blah blah blah” but that sounds very pretentious and formal. The people is much more colloquial and common.
PS: If you’re going to write anyone a letter, you might spend a little time on your spelling, as well as on your word choice.

Person is usaully meaning an individual so I would go with people. “The people I dislike most are…….”
