It means that one sure thing (the bird you have in your hand) is worth more than the two ( in the bush) you MIGHT catch if you let that on go.
Are you better off with one you know you’ve got or the two you MIGHT catch? If you let that ONE go…you might wind up with nothing.

I hate that saying. It’s the wording that bothers me I think. But yeah…it means to appreciate and love what you have rather than to pine over what you don’t.
I also hate “have your cake and eat it too!”. Yes…if I have MY CAKE….I’m going to EAT it! What’s the point of NOT eating the cake! GGGGGRRRR!!!!!
