Well the first one contains the adjective “Prince’s” which describes the diary. The second sounds like the title of a diary, though Prince is still used as an adjective. The first is correct if you’re using it in a sentence such as “I found the Prince’s diary lying on the dresser.” But you could say “The Prince Diary is a well-known account of the events in the Prince family”

If you’re trying to say that it belongs to someone, use the first one 😀
