How do we know GOOD, if there is not EVIL also?

EVIL is necessary for us to choose GOOD.

We cannot choose to do GOOD if we cannot also choose to do EVIL.

Without both, you have neither

There are ways to express that in math. It’s symbolic math or logic or something.
