It means a word may be misspelled or misused, but it is shown as originally written for realism/accuracy.

i.e. a handwritten note by a child might read “I lik [sic] food”

Everyone’s right about it being used to defer blame for bad grammar or spelling from the writer of the piece to the person with which the quote originates, however, sic DOES NOT MEAN said in context. It’s Latin and means “so, thus” according to my dictionary. Lots of things we use every day are Latin such as eg., i.e. and etc.
