I don’t think soberness is a word, so stick with sobriety. Your sentence is odd, though. Do you mean, “How are you doing at staying sober?” or “Have you been able to maintain sobriety?” Or, do you mean “sobriety” not as staying sober (not drinking), but as being serious or grave? I still can’t see it in a “how is [it] doing” sentence.

Ask somebody about how ‘they’ are doing not about their sobriety.

It’s like asking “How’s your cancer”. Because alcoholism is a disease, it’s just not a good way to address somebody.

It IS A DAY BY DAY struggle and it would probably be more appropriate to ask how ‘they’ are getting along and wishing them well. Just simply offering them your support by your well wishes and telling them you’re certainly keeping them in your thoughts is a very sweet gesture. Then let it be a done subject.

You used it correctly, but it seemed a little awkward, no fault of your own.

Do you have to use the word in that context?

Grammatically your sentence is correct but I can’t think of a situation when you would use it.
