Eat crow means stepping down from a stand you’ve taken. For example, you’ve claimed something as right, but when you’re proved wrong, you have to acknowledge that you were wrong. So you eat crow.

In the Midwest, the phrase is used more to indicate that something one has predicted has proven to be wrong. For example, if I said, “There’s no way the American people will elect George W. Bush a second time” (in 2004), the person to whom I made that remark could legitimately tell me I would have to eat crow.

Well, where I come from, the person who said it to you wants you to eat your words. It’s usually said to a person after they have said something to someone which is offensive to them. Depending on which part of the South you come from, dictates how much s–t, excuse me crow, they want you to eat. Good Luck & Blessings

it means “eat your words”

You’d use it when you say something, but you’re wrong.
