Chink merely means ‘gap’, and it would make a knight wearing armour vulnerable, as an arrow or sword could get through the chink. That is equated with a person’s weakness, like an Achilles’ Heel.

Chink–a narrow opening as e.g. between planks in a wall.

NOT any person of chinese descent.
