If a proper noun is plural, can I use the singular form of a verb?
For exmaple: XY Services do a great job.
Or: XY Services does a great job.

The name XY Services refers to one entity, although it is comprised of many people, and therefore requires the singular form of the verb. If you were talking about the people in XY Services, then you would use the plural.
Nouns like this are called collective nouns. They represent groups but use the singular verb form. Other examples would be things like flock of birds, mob of people, school of fish. Each of these are comprised of multiple units but are treated as a single unit, therefore requiring the singular verb form.

Only the 3rd person singular of verbs have s. It’s not the opposite!
