1.) I can sense that this company would provide exciting, and challenging opportunities.
or:
2.) I can sense that this company would provide challenging, but exciting, opportunities.
the first sentence sets up exciting and challenging as positives that go together.
the second sentence has a little more drama by putting challenging first (the word is value neutral — some challenges are good, some bad), and then contrasting with but exciting (which shows you recognize the positive potential of challenge, and welcome it.)
“The prospect of working for this company seems exciting and challenging.

This is an exciting company filled with challenge.
I can sense that this company is filled with excitement but will be challenging.
The company whether it be people or an actual company is a challenge, but one that is well worth it.
as far as grammar, it’s not great.
try:
filled with excitement and challenges, or
this company is exciting yet challenging.
they should be the same part of speech…
The sentence is rather clumsy with the “I can sense” open as well.
