Crumpled (verb) is best. Paper can be “crinkled” (adjective), but it can’t be crumbled as bread, bricks or rocks can be.

Crumbled means to reduce to crumbs. Crinkled suggests a meaningful pattern. Crumpled is what we do to make a piece of paper into a basketball for the wastebasket.
