It depends where you live!

I am Canadian, so I use colour and favourite (and favour, honour, valour, neighbour etc.), but an American would usually use color and favorite.

Keeping the “u” is usually considered a British thing, so you’re likely to see it used by anyone from the UK or any current or former commonwealth of the UK (Canada, Australia, etc).

“Color” and “favorite” are considered American English spellings. “Colour” and “favourite” are considered British English spellings and are used in Canada also. You find spelling differences like this between the American and British English, i.e. programme and program. It isn’t a big deal, just be aware that both spellings are acceptable, but usually found in use in their particular country. Linguistics is fun.
