Is it possible to do a thesis on something not related to what your professor does?
Is there flexibility in that?
(I am asking about psychology masters btw)

I do not know if your department will require you to do a defense of your dissertation, but if they do and if your topic is not related to what your adviser does, I am sure they will get you to find someone that knows a bit about your topic to sit on your defense committee.
In short, It is possible, depends on you and your adviser.
If you are asking about doing a thesis outside the parameters of the subject your major is in, what would be the point? If you are taking a Masters in Psychology, why would it be beneficial to do a thesis about the Mechanics of Engineering the Space Vehicle to land on Mars?
Come on, use some common sense that obviously got you this far. Or did you buy your BS
