I think it is because these stonemasons specialized in making the banks on the shoulders of roads and other stone barriers where needed.
A banker stonemasons bench is called a banker because that is what is does… it act as a banker between roads and private (or public) property, even as it acts as a bench.

banker is french for bench. and since the mason works at his bench/banker. he is known as a bankermason.
