what is the diffference between lake michigan king salmon and salt water king salmon – are they the same?
King salmon usually go in to the ocean to transform in to mature adults and return to the river system they came from to spawn 4-5 years later. What is the difference between Lake Michigan (virtually land-locked) salmon and salmon that would live in the Columbia River Gorge in Oregon and make the trip to the actual Ocean?

The salmon are not the same. The exposure to the salt water changes the consistency of the flesh in the meat of the fish and makes it tougher. From a culinary standpoint, the meat of the freshwater fish is preferred not only for texture, but also because the lack of salt exposure tends to make it sweeter.
