I actually had to answer this question for real once for a logistics class.

taste is a big one! mmmm…sugar. I think salt would have a higher electrical conductivity because of the negative ion. NaCL-

boiling point could be one. I remember in cooking that if you add salt to boiling water it increases the temperature of the boiling point. I don’t think you can do this with sugar.
