The way you’ve written it, “are” is correct since courses is plural. It is tricky, though. Look at this version: “I also took courses. That, I believe, is essential for the position I am applying for.” Of course ending the sentence with “for” is a whole different issue. The best way to write it is: “I also took the essential courses for the position.”
