I’m investigating osmosis with pear. Is it my dependent or independent variable?

well, your dependant variable is what you measure, and your independant is what you change, for example…
In a experiment, you are measuring how tall two identical plants will grow if you feed both different fertilizers over the course of 10 days… since you measure the height of the plant that will be your dependant variable, but since you chang the fertilizers, those will be the independant variables.
I.V.: Different fertilizers
D.V.: Plant height
